SOUTHINGTON - After her daughter finished her parochial school education at Sacred Heart School, Margaret Kopacz and her husband decided to move from New Britain to Southington to find a better public school district.
Southington restaurants offered the usual pizza and Chinese food options, but nothing Polish and more healthy, the couple noticed.
That’s why Margaret Kopacz, 42, and her husband Radek, 36, have decided to take on a new adventure by opening their own Polish restaurant in town.
The restaurant, Polish Plate, is expected to open on Nov. 16 in Unit 7 at 1095 West St. if all goes according to plan. The two were having plumbing work done and equipment installed this past week, Margaret Kopacz said. They are still going through the approval process with the town.
“I think we can do it,” said Margaret Kopacz, who will be keeping her day job as an accountant at Hartford HealthCare. Radek Kopacz will also still own and operate his company, RK Home Repair. They are both looking to be fully involved with their new restaurant at the start as a way to fully understand how the business works.
The restaurant’s menu will be about 90 percent Polish food, with the option of grab-and-go dishes that will be kept warm under heat lamps. That means dishes like golambki, which is a type of stuffed cabbage, stew, and deep-fried pierogi will be offered, among other items.
“(The restaurant will be) mostly surrounded by offices,” Margaret Kopacz said, so they are looking to appeal to people working throughout the day and get them to drop in to pick up something new to try on their lunch break.
But many people prefer dishes like potato pancakes and pan-fried pierogi fresh, so, there will be seating for about 20 people inside the restaurant, Margaret Kopacz said.
“My husband loves to cook,” said Margaret Kopacz, who immigrated to New Britain about 20 years ago. She and Radek met about eight years ago through a mutual friend after Margaret was divorced.
Her daughter with her previous husband, Edyta Jezewska, 26, of Middletown, is a graphic designer and is pitching in by designing Polish Plate’s logo, menu and website.
“She’s really good,” said Margaret Kopacz.
Margaret and Radek Kopacz will have two cooks and about three other staff members serving the food. They are looking to have the restaurant open from 11 a.m. to 9 p.m. seven days a week for the first three months, to see what the customer demand is and if there are any slow periods.
So far, the feedback has been good, Margaret Kopacz said, and people are anticipating the restaurant’s opening.
The couple is also waiting for a liquor license from the state so Polish Plate can serve beer and wine.
They would also like to open an outdoor patio for use in the spring and summer.
All the furniture at Polish Plate, including tables, benches and cabinets, are being built by Radek Kopacz.
