NEW BRITAIN - At a young age, Tracy Celentano knew she had a passion for pastry arts.

Celentano has been in the pastry catering business for more than 30 years. She also is a custom cake designer.

Madame Gâteaux is a commercial catering business established in 2015 by Celentano, who is a classically trained pastry chef.

Mayor Erin Stewart, among city officials and Celentano’s family and friends, cut a ribbon at the business Thursday afternoon while wishing her many more years of success.

“Here it is from us, being a grateful city for you opening your business here,” Stewart said. “We hope that everybody comes and gets all of their sweet treats from Madame Gâteaux.”

Madame Gâteaux offers custom cake designs, special occasion cakes, cookie trays, chocolate truffles, petit-fours and a variety of miniature pastry items. It’s a full-service pastry catering-business.

Celentano also creates specialty designs featuring logos and a wide array of themes.

Madame Gâteaux is located in a warehouse at 1 Hartford Square.

Madame Gâteaux is a catering kitchen, not a storefront. Orders are taken by appointment only and the best way to get hold of Celentano is by calling or sending an email.

The business also offers delivery all over Connecticut and out of state.

Celentano also teaches private pastry classes and previously taught at Lincoln Tech when it was Connecticut Culinary Institute.

Celentano, a city resident, got her degree in international baking and pastry arts from Johnson and Wales University in Rhode Island.

After an internship at Hotel du Pont in Wilmington, Delaware, she entered the ACF Delaware Valley Chefs Association food show, where she won a gold medal for three entries.

One of the wedding cakes designed by Celentano was featured in the Connecticut Bride Magazine in 2012.

Polly D’Addabbo met Celentano 20 years ago when she was looking for someone to make her wedding cake.

“The cake was magical, literally, it was probably five or six layers and it was all fondant before fondant was the in thing being popular,” D’Addabbo said. “She did all these beautiful intricate roses and flowers all made out of sugar. It just crawled all the way up the cake. It was so beautiful. The best part of it all is that everybody came up to us at the wedding and said not only was it beautiful but it tasted fabulous. It tasted as good as it looked.”

Appointments for wedding cakes at Madame Gâteaux are done on Mondays and Tuesdays. General requests can be addressed from Tuesdays through Saturdays from 9 a.m. to 5 p.m.
