PLAINVILLE - As a result of their continued success, Rebel Dog and JV’s Taproom are remodeling and rebranding as “The Tavern at Rebel Dog,” which will feature an expanded menu.

Kaitlin Higgins, marketing and communications manager with Rebel Dog, at 393 Farmington Ave., said that the restaurant and bar side, JV’s Taproom, will be closing for renovations Sunday, Dec. 22. They have tentative plans to reopen on Jan 8. The coffee shop will remain open during this time, during which the dividing wall between the sections will be taken down.

“We’re bringing everything together under the Rebel Dog brand,” she said. “We have been really successful since we first opened Feb. 7, 2017, and we recently expanded to a second at 345 Colt Highway in Farmington in March of this year. That brought in a whole new clientele.”

Higgins said that customers enjoy the “accommodating and friendly” staff, whom she said prioritize remembering customers and their orders and building relationships with the community. She also credits having an extensive lunch and dinner menu as another reason for Rebel Dog’s success. She said that Rebel Dog was Plainville’s first specialty coffee shop and thus offered a unique place for the community to come to eat and enjoy a cup of coffee.

“We have sandwiches and eggs Benedict which are good portions for fair pricing,” she said. “While some coffee shops only have pastries, you can come here, have a good cup of coffee and have a substantial meal.”

JV’s Taproom, which opened around the same time as Rebel Dog, also offers steaks and pizza cooked in a wood-fired oven. When the two sides of the restaurant combine to become “The Tavern at Rebel Dog,” the menu will be keeping popular menu items, but also adding specials from the former “Confetti!” restaurant, which is where Rebel Dog is now located. Peter Lemnotis, the former owner of “Confetti!” now co-owns Rebel Dog with Harrison Poltorak.

“‘Confetti!’ was a very popular restaurant and this will be a chance for people who remember it to enjoy some nostalgic dishes,” said Higgins. “We will also have an all-day ‘happy hour’ from 11 a.m. to 6 p.m., a revamped cocktail menu, an appetizer menu, fried chicken entrees, tacos and cold brew with braised ribs.”

Rebel Dog will be bringing in Tommy Gale as restaurant and bar manager. He is a past owner of Present Company restaurant in Tariffville, Rooster Company in Newington and Bricco Restaurant in West Hartford. Higgins said that with his past experience, Rebel Dog will have an “all-star” team.

“It’s a minor change that will improve the business using the strength of the Rebel Dog brand,” said Poltorak.

Poltorak added that Rebel Dog is also preparing to open a third location in East Hartford in fall 2020.

Rebel Dog’s Plainville location is open Monday through Friday from 6 a.m. to 7 p.m. and Saturday and Sunday from 7 a.m. to 6 p.m.
